Do you ever look in your pantry and set out looking for a recipe with certain ingredients, but aren’t quite sure what the final outcome might be? Well I had one of those moments the other day and decided after looking up loads of similar recipes, that I would try my hand at my own version. So I did, with a few simple ingredients I ended up with a very tasty veggie ball, for lack of a better name.
I started with a red onion, minced, along side a box of button mushrooms, also minced, and a drained and rinsed can of chickpeas/garbanzo beans. Added some butter and olive oil, and salt and pepper to taste. After sautéing all of those together I moved them to a bowl added about a half a cup of flour, and mashed it all together with a potato masher. Since I haven’t adulted hard enough to own a food processor yet, or a real size blender for that matter. So I worked with what I had available. I formed the mixture into balls and then pan fried them to get that crispy texture. They came out delicious! I paired them with a tomato salad, some shaved Parmesan cheese and some “zoodles”. 10/10 would make again!
Today’s outfit from bottom up, triple black Nike Rosche runs, black sweater socks rolled down, fleece lined leggings, a grey and black three quarter sleeved dress, black circle scarf and All Saints jacket. Simple, comfy & warm.
